I really wanted pizza last night but knew that I did not need it eat it. Pizza, even with vegetables, has no nutritional value. It has very little protein, barely any vegetables really fit on top, and its full of carbs and too much cheese. So I made this alternative and I have to say it hit the spot! One pan, minimal clean up, and so satisfying!
Salt and Pepper
Pepperoni’s or good quality ham would be good too
Good quality tomato sauce
Fresh Basil chopped
Pre-heat your oven to 425
Toss the chicken thighs in olive oil, seasoning, salt and pepper and roast in the oven for 25 minutes.
Toss the zucchini and onions in olive oil, salt and pepper.
After the 25 minutes, take out the pan and move all the chicken to one side. Lay out the zucchini and onions on the pan and put it back into the oven for another 10-15 minutes.
Once the chicken and zucchini is cooked, take the zucchini off the pan and onto your plates.
Set the oven to broil.
Layer 3 pepperoni’s on each chicken thigh then a slice or two of fresh mozzarella.
Broil for just a couple minutes-Watch it
Serve the tomato sauce on the side for dipping or just spoon some on top of each piece of chicken. Sprinkle chopped basil on each chicken thigh just before serving.
