I needed to bring a salad to my family BBQ this weekend, so this is what I came up with. I haven’t been into kale lately. I think it’s because I am too lazy to clean it and cut it. But Trader Joe’s has a kale, cabbage mix that is ready to go and perfect for this salad. It turned out really good! We had it with Burgers at the BBQ but I had it the next day with grilled Chicken Thighs. Delicious!
1/2 bag of Trader Joes Kale Mix
5-10 Asparagus spears
1/4 cup sliced red onion
1 garlic clove
1/2 cup olive oil
1/4 cup apple cider vinegar
2-3 TBS Mirin (Japanese cooking wine) or you could use 1 TBS Maple Syrup
1 tsp Lemon zest
Pinch of salt
Roast the vegetables in the Oven at 425 for about 8-10 minutes. You want them to be underdone. Then let them cool completely before adding to the salad.
Toss together your salad dressing and taste. I add more vinegar than this recipe but I like it sour.
Coat the kale mix with just enough dressing and then massage it a little with your hands. Then toss the cooled roasted vegetables on top. You could add a sprinkle of slivered almonds or crushed pistachios to this.
