This recipe was amazing! I love that you could have everything ready and then bake whenever you or your guests are ready. I know this would be great with Chicken. You could just pick up a rotisserie chicken and use the meat for a great variation. It would be great with black bean if you wanted.
1/2 TBS olive oil or coconut oil.
1/2 lb meat ground turkey, pork, chicken
1/4 diced white onion
2 garlic cloves
1 tsp Cumin
1 tsp Coriander
1 tsp Smoked paprika
1 tsp Chili powder
2 bell peppers cut into fours
1/4 cup Shredded cheese (cheddar or jack your choice)
1/2 tsp Green hot sauce
1/8 Cup Coconut cream
2 TBS fresh Lime juice
Salsa of your choice
Pickled Jalepeno or yellow mild peppers
Pre-heat your oven to 425 degrees.
Sauté your onion until just translucent. Add in the spices and garlic for about 45 seconds. Add the ground meat. Cook until just done. Set it aside and let it cool a bit.
Cut up your vegetables. When you cut the bell pepper, try to cut on the indents. This will give you nice round scoops.
Once your meat is cooled add in the cheese.
There should be the perfect amount of meat to stuff 8 bell pepper pieces. Stuff them and then bake for about 10-15 minutes.
Take them out and top with salsa, guacamole, and green onions!
Viola! That’s it. So easy and healthy.
