Sometimes the simplest recipe can totally transform a meal! That’s the case with this mango salsa. It takes about 4 minutes to prepare. Top grilled fish, chicken, or my favorite shrimp, and you’ve got a spectacular meal.
Mango Salsa
1 mango diced
1/4 Cup diced red onion
1/2 Cup diced red bell pepper
1-2 TBS chopped cilantro
pinch of cayenne
pinch of salt

Sauté the shrimp for just a couple minutes in the coconut oil. They should just turn pink. Then top with the salsa and coconut cream. I also tore up pieces of nori (seaweed) to make little bundles by hand. You could use lettuce wraps instead.
