I was so skeptical of this working but I could actually pick up a piece and eat it! I loved the flavor and even the consistency. I topped it with red pepper, red onion, and yellow pepper rings! The options are endless. It was perfect for Super Bowl Sunday!
4 cups cauliflower (crumbled in a food processor)
1/2 cup Italian cheese mix
Pinch of dried basil, oregano, parsley, and crushed red pepper flakes
1/4 cup cornmeal
Pre-heat the oven to 450 Degrees.
Process your cauliflower in the food processor.
Microwave it for about 3 minutes. Then either squeeze out the water using a cheese cloth or use a fine sieve to strain it.
Mix the cauliflower with all the other ingredients.
Lay parchment paper on a sheet pan. Best is one of those perforated ones. Rub some olive oil on the parchment paper too.
Spread the cauliflower mixture out (with your hands) onto the parchment paper.
Bake it for 8-11 minutes until just browning.
Then top with your favorite toppings and bake for an additional 8-11 minutes.
Let it cool!
Let it cool! Probably about 5-8 minutes. Then cut it and enjoy!
My Mom made one the week before (she was my inspiration). Her toppings were better: cherry tomato, spinach, feta, and chicken.
