What is Paleo? If you haven’t heard of it yet then I don’t know where you have been. No seriously. It is basically eating like a our caveman and cavewomen ancestors did. Eating real plants that have been grown in the earth, real animals that have been able to roam or swim in their natural environments! Paleo diets exclude grains. I am not a fan of trying to be on one diet or one style of eating. But I know from doing elimination diets that I do not feel good when I eat grains. So fried chicken is not something that I eat. So one night I tried making something that might cure my craving for those crispy chicken tenders that you dip in bbq or honey mustard. The combination of almond flour and sesame seeds tasted amazing! It was easy! It didn’t feel like I was cheating on my diet either! I served it with collard greens and red onions and some bbq sauce for dipping! Hope you like it.
Pre-heat the oven to 425 Degrees
4 small Chicken Thighs (free range)
1/2 Cup Almond Flour
2 TBS Sesame Seeds
Oil a sheet pan.
Mix together the Almond Flour, Sesame Seeds, and seasonings, and salt. in a bowl
Whip the egg in a separate bowl
Dry Chicken thighs using paper towel
Dip into the whipped egg
Toss in the mixture of Almond Flour and spices.
Place on the oiled sheet pan
Bake for 15 minutes
Flip and bake for about 15 more.
