If you have a ton of zucchini then some make pickles!
Even if you don’t have a ton then make some pickles 🙂
Zucchini pickles are every bit as delicious as their cucumber counterparts. You can vary this recipe in a ton of ways. So feel free to experiment with the seasonings.
Lay out 4 cups 1/8-inch zucchini slices and sprinkle with salt. Let it sit for about 20-30 minutes. Blot them dry with paper towels.
Then Combine them with:
1 cup slivered sweet or red onion
3 thinly sliced garlic cloves
1 cup Apple Cider vinegar
1/8 cup maple syrup
3/4 teaspoon pepper
1 teaspoon caraway seeds
3/4 teaspoon turmeric
3/4 teaspoon kosher salt
Pour over zucchini mixture. Cover and chill 24 hours. If it doesn’t cover the sliced zucchini then add a little water.
