I made this salad over the weekend and it was so delicious! You could eat it as a side salad or easily serve it over spinach for a great main course. Quinoa is a great source of protein and you’ll get a healthy dose of vitamins from the bright and beautiful cherry tomatoes, parsley, and corn (best if you buy fresh from the farmers market right now!)
2 Cups Cherry Tomatoes
1/2 Cup Corn (boiled or even better grilled)
1/4 Cup Feta, or Mozzarella Balls, or even Goat Cheese (optional)
1/4 Cup Cooked Quinoa
2 Tbs Parsley (chopped)
3 TBS White Balsamic
2 TBS Olive Oil
Pepper
Toss everything together and let sit for at least an hour. I have to say that it was even better the next day!
