My mom makes an addictive spaghetti salad. It is requested for all summer gatherings. It’s fairly healthy already. I’m lucky to have a great mom who served healthy dishes growing up. But I decided to kick up the healthy factor just a tad! Depending on the crowd, I either half the portion of spaghetti and replace it with zucchini noodles or just replace the whole portion. This is the half and half version. Check it out.
1 8oz box wheat or rice spaghetti
2 zucchinis (about 6-8 inches) or 4-5 if you are omitting the pasta
1 can sliced black olives
20-30 grape or cherry tomatoes (I halve them, but it is time consuming and unnecessary)
5-6 green onions chopped
1 bell pepper chopped (or 1/2 red and 1/2 green)
14 oz Italian dressing (I used Annies because it was the most natural)
1/4 Cup Salad Supreme Seasoning (found in the spice section)
Break the spaghetti in half and cook until just tender.
Rinse in cool water, drain, and set it aside for the fun stuff.
Slice zucchini with a vegetable peeler or spiralize (this is my new favorite kitchen tool. It rocks!)
Add olives, peppers, onions, and tomatoes to the noodles and zucchini noodles.
Pour the Italian dressing and the salad supreme seasoning over everything.
Mix it up (I like to use my hands, but it’s cool if you use a utensil)
Refrigerate and serve.
