Spinach, Onion & feta Quiche
I med onion
6 oz of spinach
2 large eggs
1/2 c egg beaters or similar egg substitute
1/2 c all purpose flour (have not yet tried gluten free flour)
1/2 tsp baking powder
1/4 tsp salt
Pinch of cayenne pepper
1 + 1/3 c skim milk (we use homemade almond milk)
1/2 low fat feta cheese
Preheat oven to 400 degrees.
Spray quiche pan (pie pan).
In a medium pan, cook onion w cooking spray until translucent and tender.
Add in spinach and cook until just wilted.
Set aside to cool.
In a large mixing bowl, whisk together eggs, egg substitute, flour, baking powder, salt and cayenne.
Whisk in milk and then stir in onion-spinach mixture.
Pour into prepared pan.
Top w feta cheese.
Bake for 25 minutes or until center is set and outside is golden brown (really pretty).
Let sit for at least 5 min before serving.
