I love pasta! I know that I am not alone. But pasta can be high in calories and high in the unhealthy carbohydrates. So a solution that I have found is to cut the amount of noodles I use in half and then use sliced zucchini to fill in. It’s is delicious and an easy way to cut calories in half plus add vitamins!
2 cups chopped tomatoes
3/4 C Sun-dried Tomato
1 Tbs Balsamic
2 Tbs Olive Oil
1 big clove of Garlic (unless you are a garlic addict like me. I use 2-3)
1 tsp Oregano
1 tsp Basil
1 pinch of salt
1 tsp honey or agave
2-4 Shredded Zucchini
2 servings of Spaghetti
Mushrooms marinated in balsamic vinegar
Begin boiling the pasta according to the package.
Blend the sauce ingredients well and either set aside or place in a pan to simmer.
Shred the zucchini with a vegetable peeler or if you have a spiralizer that would do the same then you could use that. You aiming to make long thin slices to look like the pasta.
Chop any optional ingredients.
Strain the pasta and toss with the zucchini noodles. Top with the sauce and then the toppings and then the Parmesan. I enjoy this dish cold in the summer, but you could sauté the toppings and warm up the sauce for a warm pasta dish. Enjoy!
