Makes about 8-10 cookies
Pre-heat oven to 350 degrees
2 Egg Whites
1/4 Cup honey
1 tsp Vanilla Extract
1 & 1/2 Cup Unsweetened Shredded Coconut
1/8 Cup Almond Flour (meal)
Parchment Paper (not wax paper. I used wax paper on the first attempt, and learned the messy way)
Mix the coconut, almond flour, and honey and vanilla together and set aside.
In a separate bowl, beat the egg whites until they are stiff. That means they look fluffy and jiggle only a little when you shake the bowl. It took about, ok, exactly, 1 minute and 37 seconds for me to do this with an electric handheld mixer.
Fold the coconut, almond flour, honey and vanilla into the egg whites.
Use a soup spoon to drop balls onto a parchment paper lined baking sheet.
Bake for 15-20 Minutes.
For decoration.You could totally add a drizzle of melted dark chocolate or dip them in a pool of it. But they are so delicious on their own.

If you were to compare to a chocolate chip cookie. They have about 10g less sugar. 15g less carbohydrates, and about 60 calories less then a cookie. I’m just saying…..
