I am a huge fan of tacos! All kinds, chicken, pork, shrimp, but especially a fresh and healthy fish taco! You would think that after being in Mexico for a week and eating a truck load of fish tacos, I might be sick of them. Crazy, but I’m not. Laura, a client told me about this recipe. She told me about using smoked trout instead of cooking fish and how easy it was. Well if you are looking for a no cook recipe for this summer, than this is it! It’s so fresh and the smoked fish against the fresh lime slaw is a really great match. Thank you Laura! If you are not into smoked fish or can’t find it then it would be just as delicious with cod or another mild white fish.
Pescado = Fish in Spanish
One Package Smoked Trout 8oz
8-12 soft corn tortillas or crunchy tostadas
and the slaw
3 Cups of shredded green cabbage (I bought the pre-shredded at Trader Joe’s)
1/4 cup corn (I just microwaved frozen corn for about 20 seconds)
1 Lime (Juiced)
2 Green Onions chopped
2 – 3 Tbs chopped cilantro
1 tsp salt and pepper
1/2 tsp cayenne
1 tsp maple syrup
Mix together the cabbage, lime juice and seasoning with your hands to make sure it fully mixed and coated.
Put a small amount of trout on either your soft or crunchy corn tortilla.
Then add a little slaw
I did try it with some greek yogurt and it was good but not really necessary.
So easy! The slaw is so simple but just delicious, fresh, and healthy!
