These protein bars are so easy, so tasty, and so healthy. It is essential to refuel your muscles after a workout. So keep some of these bars on hand and you are all set to go! I usually store them in the fridge, or they can be frozen too! Note that if the mixture is too crumbly you may have to add more dates. I have just been putting them into cupcake wrappers and then into a container and straight into the fridge. You may even have a better idea-so please leave comments below!

Pumpkin Spice Protein Bites
4 scoops Whey Protein Powder – unsweetened Natural
1/2 Cup Whole Almonds
1 Cup Deglet Dates
2 TBS Pumpkin Puree (canned or homemade)
1/2 tsp Pumpkin Pie Spice
1 TBS Shredded Unsweetened Coconut (optional)
Chocolate Protein Bites
4 Scoops Chocolate Protein Powder Unsweetened (*see note)
1/2 Cup Almonds
1 Cup Deglet Dates
1 TBS Shredded Unsweetened Coconut (Optional)
IMPORTANT NOTE: Soak your dates for about 15-30 minutes in luke warm water. Drain them really good. Squish out all the water and then pack them into your measuring cup.
1. Blend in a food processor the Almonds, and Protein Powder,to a crumble.
2. Toss into a bowl.
3. Blend the dates (and pumpkin puree if making the pumpkin bar) and pulse, and stir until it turns into a paste.
4.Toss the date mixture into the bowl with the nuts and protein powder.
5. Use your hands to fold and form into a big ball. This will seem like it’s never going to incorporate. Trust me it will. If it really doesn’t than blend up some more dates and add to the mixture.
6. From here you can either roll out into one square and cut into bars or you can roll into balls and toss with the coconut.
*Unsweetened chocolate protein powder is usually still sweetened with stevia. The combination of stevia and the dates makes for a super sweet bar. I am still searching for a truly unsweetened brand of chocolate protein powder. You can use half the amount of natural unsweetened regular protein powder and 2 big TBS of cocoa powder instead, for a less sweet version.
