I am always thinking ahead. It can be annoying sometimes. However, when it comes to making meal time delicious and fast, I’m on it. If I bring home a pound of turkey then you can be assured I’m probably going to make these three dinners. I may freeze one for another week, because lets face it too much of a good thing is still too much.
You could easily skip this and buy Trader Joe’s frozen turkey meatballs but if you have time this is so much better. Trader Joe’s also has pre-made burgers that can save a ton of time! just sprinkle on the seasoning and grill!
Italian MB Soup
Divide your pound into two. Set aside half for turkey burgers and then we’ll use the other half to make the meatballs.
Mix up the ground turkey with using the following recipe. You don’t have to use all the ingredients but it will taste the best if you do.
1/2 lb Ground Turkey
1/4 Cup almond flour or other flour
1/8 cup finely diced sun dried tomato or raisins (I know raisins sound strange but it is amazing what they do)
1/4 cup finely chopped onion
1/2 cup finely chopped mushrooms
2-4 cloves minced garlic
3-4 TBS shredded Parmesan or Pecorino cheese
1/8 cup chopped Italian Parsley (Italian is so much better. These are the big leaves)
1 – 2 tsp zest of lemon
Pinch of Nutmeg
1/2 TBS Oregano
1 tsp Paprika
Salt and Pepper
Mix it all together. Form into balls. Try to make 12-15 balls. Heat up just enough olive oil or coconut oil to coat a pan. Brown the balls on med/med high heat. Drop them into the pan and don’t turn them or touch them for about 2 minutes per side. Once they are browned toss is your sauce or stewed Italian tomatoes (break them up). Cover and turn the heat down to low/med low and cook for about 15-20 minutes. Take out the balls that you want to save for the meatball soup and serve the remaining with shredded zucchini, 1/2 cup cooked pasta, and a little more cheese sprinkled on top. 4-5 balls per serving.
With the pasta and stewed tomatoes:
Italian Meatball Soup
4-5 Leftover Meatballs or you could use Italian Turkey Sausage
1/4 Cup White Beans
1 Cup Chicken Broth
1/2 Cup finely chopped Kale
1/4 cup finely chopped bell pepper, or other veg of choice
1/2 TBS tomato paste or leftover stewed tomato sauce
1 tsp Balsamic Vinegar
Bring the broth, kale and veg to a boil then turn down to a simmer add everything else and warm it up.
You can easily add everything in a microwave safe bowl and microwave it when you get to work too. Easy!
I keep these simple. I sprinkle with Trader Joe’s African Smoke. Oh this is so good on burgers! Then maybe some other flavor that I’m in the mood for such as cumin and paprika, or sometimes thyme and parsley, or maybe a turmeric, cumin, and coriander Indian flavored burger. Serve either on a mushroom like below or in a lettuce wrap or use half a bun.
