I adore food that is kind of like something traditional that I love but with a twist! Like Duck Nachos from Melange in Ann Arbor, or Portabella’s in place of a burger.

Who say’s you need tomatoes for a gazpacho, eh not me! This cold soup is so refreshing, quick, and tasty!
2 English Cucumbers
2 Cups White Grapes
1 Diced Green Onion
2 TBS Rice Vinegar
2 TBS Plain Greek Yogurt
Juice of Half a Lemon
1 TBS Chopped Parsley or Chives
Blend until perfectly smooth. You may want to add about 1/4 cup water to thin it a little. Garnish with a little dollop of yogurt and half a grape and a sprinkle of herbs!
Try this fresh take on the been there done that tomato mozzarella caprese. It is totally worth a try! I love the layered look of the salad and I almost think it could be served as a dessert if you go with the goat cheese and a drizzle of honey. What do you say? I also have to say that thought is was even better without the cheese. I know you probably think I’m crazy. Honestly just the nectarine and mint together was so refreshing!
Peach or Nectarine
Goat Cheese or Mozzarella
Mint Leaves or Basil Leaves
Layer slices of fruit with cheese and herbs.
Maybe a pinch of salt or olive oil if you like (I think Fustini‘s Meyer Lemon Olive Oil would be amazing)
