This is such a filling and delicious salad. I bring it as a dish to pass often, and my family loves it!
For 2 people as a meal or 4 as a side dish
½ cup Quinoa (uncooked)
1 bunch of kale (De-stemmed, rinsed and chopped) (if you buy it at Whole Foods use 2 bunches)
2-3 cloves garlic
1 TBS fresh minced ginger or 1 tsp ground
1 TBS White Miso
1 TBS agave or honey
2 TBS Tahini
1/8 cup toasted sesame oil
1-2 TBS Tamari
¼ cup rice vinegar
About ¼ cup water to make it smooth or OJ is really good too
Cook the quinoa, and steam the kale in the microwave for about 20 30 seconds.
Microwave the garlic cloves for 15 seconds to soften.
Add all the dressing ingredients to the blender/food processor.
Mix and taste. Add whatever you think it needs.
Mix the kale and quinoa together then slowly add the dressing until it is coated. You may have some dressing left over. It depends on your taste.
*If you toss the quinoa into the salad while it’s still hot, it will wilt the kale perfectly. If you made the quinoa way in advance, I recommend microwaving the kale for about 40 seconds just to take off the bite.
