All those green vegetables are the best thing you can do for your body. They are full of vitamins, minerals, antioxidants, and they will aid in alkalizing your body. These low calorie choices will benefit your health, your weight loss, your digestion, and your teeth.
Kale is my favorite. It scores the highest on Eat Right Americas rating scale
1 Cup has only 36 calories,
5 grams of fiber, and 15% of the daily requirement of calcium and vitamin B6 (pyridoxine), 40% of magnesium, 180% of vitamin A, 200% of vitamin C, and 1,020% of vitamin K. It is also a good source of minerals copper, potassium, iron, manganese, and phosphorus.
Super high concentration and excellent source of antioxidant vitamins A, C, and K — and sulphur-containing phytonutrients.
Carotenoids and flavonoids are the specific types of antioxidants associated with many of the anti-cancer health benefits. Kale is also rich in the eye-health promoting lutein and zeaxanthin compounds.
Also, the fiber content of cruciferous kale binds bile acids and helps lower blood cholesterol levels and reduce the risk of heart disease, especially when kale is cooked instead of raw.
So how can you eat more of it?
Toss it into an omelet with some feta cheese
Toss it with olive oil and saute lightly. Then sprinkle with balsamic and Parmesan cheese
Make a smoothie with 1 Cup almond milk, 1/2 a banana, and 1 handful of kale
Use it instead of romaine for your dinner salads. Just chop it up small and then put it in the microwave for about 30 seconds. This just takes the bite out of it.
