I usually eat oatmeal every day, but on the weekends occasionally I’ll whip these up. These are fantastic! They are dairy and egg free, but if you only have regular milk, it will work just fine! I love to top these with Blueberry or mixed berry syrup instead of maple syrup.
Makes about 10-12 pancakes
Note: I have been experimenting with adding some protein powder. If you try it, just be sure to add enough liquid to keep the consistency the same. They are much more satiating this way!
1 & ½ cup whole wheat pastry flour or all-purpose flour
1/8 cup ground flaxseed (optional)
1 ½ tsp baking powder
½ tsp baking soda
¼ tsp salt
1/8 tsp cinnamon
1 ½ cups soymilk & 1 tsp cider vinegar (sit for 5 min) or regular milk and no vinegar
1 Tbs canola oil
1 tsp vanilla
2 small ripe bananas-blended
¼ cup walnuts chopped(optional)
In a large bowl mix together flours, baking powder, baking soda, salt, and cinnamon.
Mix wet ingredients in blender (or just use some muscle)
Mix both together
Heat the griddle to 360 or a skillet to med/med high.
Oil the surface and then pour each pancake out, then use a spoon to spread the mixture around a little. Heat until full of tiny bubbles and then flip.
1 Cup Blueberries or frozen Blueberry’s (thawed)
2 TBS agave or honey
Just blend and pour over those frickn’ delicious pancakes!
